We buy it fresh, harvested daily, from our Northwest growing partner!
So here’s the Skinny on Asparagus
Asparagus is harvested usually April through June. It is from the lily family and grown in sandy soil.
Look for smooth skin, bright green color, compact heads, and freshly cut ends. Ours has bright green stalks with purple-tinged tips, which ensures tenderness. Avoid wilted or limp stalks. Thick or thin spears, neither one indicates tenderness.
Keep fresh Asparagus refrigerated in a plastic bag with a moist paper towel wrapped around the stem ends or stand them upright in two inches of cold water and covered with a loose plastic bag in the refrigerator for 2 to 3 days.
Cut or snap off the tough ends. You can cook the spears as they are, or peel the skin to make stalks more tender.
